Bone broth is a healthy and tasty concoction prepared by roasting bones and then simmering the bones (and any small scraps of meat left on them) in water for at least 24 hours with vegetables and spices. This process releases minerals and gelatin from the bones into the broth. Unlike store-bought broth and stock, which often have gelatin and other nutritious components removed and chemical additives put in, homemade bone broth is very rich in nutrients, as well as in anti-inflammatory chemicals like glutamine, proline and glycine. This means bone broth is particularly good for healing and fighting inflammation.
